
A native of Burgundy, France, Chef Perret counts his family's produce stands at local french farmers markets as some of his greatest influences. He also cites his grandmother as a cooking inspiration. To date, Perret has manned kitchens in France, Canada and the US, bringing to ici globally-inspired dishes grounded in classic french techniques.
The new menu includes dishes such as Paella risotto with chorizo, clams and mussels, braised lamb shank with thyme jus and eggplant gratin and Burgundy escargots with fennel and cream.
