Back by popular demand, Executive Chef Victor Albisu of BLT Steak teaches the art of breaking down a full hog and creating inventive pork dishes in next Saturday's "whole hog" cooking class. BLT Steak's year-round cooking class series introduces aspiring cooks to a host of Albisu's tips and tricks and instills a commitment to local ingredients and products.
All classes are $100 per person and include a four-course lunch of demonstrated dishes including Lechon Asado, Whole Roasted Suckling Pig; Testa, Crispy Pig Ears and Artichokes; Valencia Salad, Almonds, Iberico Ham, Piquillo Peppers and Chorizo Stuffed Pork Loin Roulade, Citrus, Romeso.
